What to Eat When Extremely Pregnant

It’s been a struggle to eat at home of late. Now that we have reached the month of our daughter’s birth, Robin is not able to stay on her feet as much. So tonight, the rest of the family makes dinner (with a little help from Mom).
There was a cold rain today. So cold that school was canceled for fear of a freezing rain, which never happened. In addition to being out of the routine today, Robin had her baby check up, which is now weekly. When dinner time rolled around, she was quite tired. We considered going out to dinner, but we have been out quite a few times in the last couple of days and nothing appealed tonight. Happily, the kids were able to convince mom that pancakes were quite appropriate.

Our daughter certainly made the most of her day off from school. The highlight was Grammy’s visit (to babysit while Robin was at the doctor). Chris returned home from work as Grammy was leaving. She paused before leaving to say, “wait until you see your daughter.” Our daughter found every necklace and hair clip in the house and was wearing them with a little blush (a little being relative for a five year old). She sounded like wind chimes in a soft summer breeze every time she moved. Plus, she had bacon for dinner, “I looooove bacon!”

Both kids were quite happy to lend a hand in the preparation of tonight’s meal. Our son has reached the point that he wants to do everything that his big sister does. It takes a little longer, but he’s quite pleased with himself. Possibly the oddest aspect of the preparation is that both kids insist on eating the pancake ingredients (flour, salt, sugar, and wheat germ) separately. We are not sure what is more strange – them eating the flour or the wheat germ.

After all this, dinner was wonderful. We really do enjoy a good pancake dinner. Vitamin E pancakes are doubly good since E is our daughter’s favorite letter. Everyone eats and Robin does not do as much work as normally she would (though we are unable to keep her out of the kitchen entirely).

We do not have a kids’ section to the cookbook, because our kids are just too finicky as their little taste buds evolve. Even so, if we did have such a section, tonight’s meal would certainly find a place.
