Yogurt-Avocado Dressing

Avocado is a rich and creamy addition to any salad. In this recipe, we temper its richness by blending it with low-fat yogurt and adding pickled jalapeño and lime juice. This is a thick dressing that could be thinned with water or more oil. It is good with green salads, but could also be mixed with seafood for a "different" seafood salad. Originally served as part of First Field Trip.

Ingredients

  • ¼ cup plain, lowfat yogurt
  • ¼ cup ripe, mashed from half of a Haas avocado
  • 8 slices jarred, hot pickled jalapeño (drained)
  • 2 tablespoons fresh lime juice
  • salt & pepper
  • ½ tablespoon extra-virgin olive oil

Instructions

In our blender, we combine the yogurt, avocado, pickled jalapeño, and lime juice. We add a pinch of salt and some freshly ground pepper, blending briefly. We scrape it down, add the oil, and blend again until it is a smooth dressing. We taste for seasoning and serve in a ramekin.
