Chocolate Chip Pancakes and Roasted Potatoes

Menu
- Buttermilk Chocolate Chip Pancakes [View Recipe]
Quick View
Ingredients
- 1 cup flour
- 1 teaspoon baking powder
- .5 teaspoon baking soda
- 1 tablespoon sugar
- .25 teaspoon salt
- 1 egg
- 1 cup buttermilk
- chocolate chips
Instructions
We pre-heat the griddle to 375 degrees.
In a small bowl, we combine the dry ingredients and mix them well.
In a medium-sized bowl, we beat the egg slightly with a fork. We add the buttermilk and stir until combined. We add the dry ingredients to the egg-buttermilk mixture and stir with a wooden spoon until just combined. We leave some small lumps in the batter so that we don't overmix the batter.
We spoon 1/4 cup of the batter onto the griddle for each pancake. For those pancakes that will become chocolate chip pancakes, we immediately distribute the chocolate chips in the batter before it begins to get heated.
When the edge of the pancakes begin to harden (the bubbles that form in the batter no longer disappear), we flip the pancakes. We cook the opposite side for about another minute and serve immediately.
- Roasted Red Potatoes [View Recipe]
Quick View
Ingredients
- 6 red potatoes (cut into small chunks)
- 2 teaspoons olive oil
- 1/2 teaspoon pepper (fresh ground)
- 1 teaspoon salt
Instructions
We begin by pre-heating the oven to 425 degrees. We place the just-cut potatoes in a bowl and we toss them with the other ingredients. Once they are well coated, we spread them out over a parchment paper covered cookie sheet. We put them in the oven and cook for 40 minutes, or until they are tender and begin to brown.
We serve them with additional salt and pepper, as necessary.
