Myth Pasta

Ingredients
- .75 pound pasta
- .5 cup parsley (cleaned and chopped)
- 5 ounces spinach
- 1 cup ricotta
- salt & pepper
- red pepper flakes
- cheese
Instructions
We start by heating a large pot over high heat with water for our pasta. While the water is coming to a boil, we get our sauce ready.
In a large bowl we put our chopped parsley. We chop a little of the spinach at a time with our knife and add to the bowl.
When the water comes to a boil, we add salt and the pasta. We stir and cook until al dente. Just before it is done, we scoop 1 cup of the pasta cooking liquid into a 2-cup glass measuring cup. We add the ricotta to the hot liquid and stir well.
We drain the cooked pasta into a colander and add back to the pot. We dump in the spinach and parsley and stir in the ricotta sauce. The mixture is tossed with tongs and salt and freshly ground black pepper are added.
We serve each portion topped with red pepper flakes and freshly grated Locatelli.

We have been watching a great deal of television lately. Nursing the baby is very important, but tends to keep us (mostly Robin) sedentary for long periods of time. Lucky for us, we're computer dorks (mostly Chris).
Last summer, we started experimenting with MythTV, which is a digital video recorder, similar to TiVo. MythTV only runs under Linux, and it is a bit of a chore to setup. We only run Linux (no Microsoft for us, thank you) and do not mind a challenge, so we have had a working MythTV box for a while now. Until the baby was born, it was mostly Chris's toy. After the new addition, Robin found MythTV very convenient - especially for those 3 a.m. feedings.
One of the shows that we had not been able to watch much in the past is Molto Mario. This despite the fact that Robin's father was partial to his Food Network show. We owe the inspiration for this meal to a recent Molto Mario episode (and indirectly to Myth for giving us the chance to watch it).
