- 10 ounces zucchini
- 1 teaspoon oil
- salt & pepper
Instructions
We begin by pre-heating the oven to <temp val="425"/>. We cover a cookie sheet with parchment paper.
We rinse the zucchini, dry with paper towels, and place on the cutting board. Each is sliced thinly, less than ΒΌ inch, and put in a bowl. We drizzle with the olive oil, tossing well, and spread on the parchment paper. We sprinkle on salt and pepper and roast for about 20 minutes until tender and starting to caramelize.

A few weeks back we had some grilled pizza. It was fun for the whole family, so we had to do it again. We need some building blocks first: a simple sauce and some zucchini for toppings.
The kids ate well tonight. The adults may not get excited about simple pasta dishes, but our son certainly does. It has been several days since he last had his preferred meal. He had four helpings tonight. Our daughter did a good job with her dinner as well. The best eater among the kids was probably the baby who started on rice cereal this week. Her brother and sister did not adjust to solid foods nearly as quickly as does the baby. Wonder if that means that she will eat grits and okra when she gets older.
We can only hope, because there are some dishes that should always excite.
