Quick View
Ingredients
- 2 cups pasta
- 2 tablespoons nuts
- oil
- 10 leaves basil (cleaned <howto label="salad"/>)
- wedge cheese
- pepper
Instructions
We start by defrosting the leftover pasta in a large bowl, covered, in the microwave, on the defrost setting. Meanwhile, we toast the nuts on a piece of foil in the toaster oven at <temp val="350"/>. It takes a few minutes for the nuts to brown lightly, we need to be careful, of course, not to burn them!
When the nuts are toasted, we remove them from the toaster oven and let cool. We heat the pasta in the microwave for a minute at a time on full power until hot.
We serve each portion and top with pine nuts, drizzle with olive oil, tear on the basil, and freshly grate some cheese on top with our peeler. We finish at the table with freshly ground black pepper.

- Sautéed Arugula (it's a vegetable)
Dinner was necessarily simple after yet another hectic weekend. The kids had themselves a sleepover at Grammy's and Boppy's house Saturday night. The kids have been talking about this every day for the last month and a half. We had doubts that our son understood the concept of sleepover (though he did sleep there when the baby was born). He proved us wrong by spending the night.
While the kids were away, we took the baby to the Szechuan House in Lutherville. This was something of a birthday dinner for Robin since we had visitors on her birthday. It may not seem like much of a romantic meal, having a baby in tow, but it was nice to enjoy a dinner without one or more kids constantly talking. Afterwards, we drove down to Baltimore to get cheesecake from the Cheesecake Factory.
Today our daughter began first grade. She claimed it was a gazillion times better than fireworks night ("a gazillion is a real number, right?"). Dinner, although tasty and satisfying, was hardly worthy of marking the occasion. So after dinner, we went to Beach Bums in Towson for some ice cream.
