- Sausage and Pepper Sandwich (using parmesan herb bread, spicy italian chicken sausage, peppers, mushrooms, and mozzarella)

Ingredients
- 2 teaspoons cocoa
- 1 tablespoon water
- .5 cup milk (divided)
- .75 cup coffee
Instructions
In an 8 ounce microwaveable, glass mug, we combine the cocoa powder and water, without stirring. We cover with plastic wrap and microwave for 20 seconds. We discard the plastic wrap and stir well. We pour the milk in a tall, microwaveable glass. We microwave it, uncovered, for 30 seconds to heat. We add the coffee, which is usually cold and leftover, and about ¼ cup of the skim milk to the cocoa mug. The mug is heated, uncovered, in the microwave, on the beverage setting until hot.
While the mocha heats, we froth the remaining skim milk with our milk frother. The brand of frother that we have does not include instructions, but through trial and error we found that inserting the frother just under the level of the milk/foam and turning the machine on will produce a nice froth in less than a minute.
We top the hot mocha with the frothed milk, a little at a time, as we enjoy our beverage.
What better way to celebrate than with sausage and peppers? Well the kids did not care too much for that particular menu item (they ate bologna of all things), but the adults certainly enjoyed themselves.
After dinner, we ran some errands, then headed up to a new coffee place in Hunt Valley—Caribou Coffee. Unbeknownst to us, we found ourselves at the grand opening. That meant free drinks and someone dressed up as a caribou. Both kids and adults had fine time.
And finally, we roamed about elementary school, doing math things. Both the older kids thoroughly enjoyed the activities. The baby had a pleasant time looking at all the big kids.
Once the kids were in bed, the adults enjoyed the end of Mardi Gras. Robin her last frothed drink and Chris his last dessert. It will no doubt be a long 40 days, but that is rather the point...
