Parsley Potatoes

Parsley potatoes are a nice manner in which to present a standard side dish. The potatoes are simply boiled making the preparation easy. The parsley dresses them up nicely. Originally served as part of Fish Sticks and Parsley Potatoes.

Ingredients

  • 20 small, red potatoes
  • to cover water
  • 1 teaspoon lemon juice
  • 2 teaspoons butter
  • 2 tablespoons chopped parsley
  • to taste salt & pepper

Instructions

We place the washed potatoes in a medium pot and cover with cold water. We bring the water to a boil, add some salt, and then lower the heat to a simmer. We cook until fork tender.

We drain the potatoes in a colander. After a few minutes, we halve them and sprinkle them with the lemon juice on the cutting board.

In a medium bowl, we toss the potatoes with the butter, parsley, salt and pepper.
