Mashed Potatoes

When you're talking comfort foods, you're talking mashed potatoes on the side. Creamy. The Yukon potatoes give the mashed potatoes a golden hue even without adding too much butter. Originally served as part of Leftover Pot Roast and Mashed Potatoes.
Ingredients
- 2 pounds Yukon gold potatoes (scrubbed)
- 1 cup whole milk (heated in the microwave for 1 minute)
- 3 tablespoons salted butter
- salt & pepper
Instructions
We put the scrubbed potatoes into a large pot and cover them with cold water. We bring it to a boil, add some salt, and simmer covered for about 25 minutes. We want the potatoes to be fork-tender.
We drain them in a colander and let them sit for a few minutes. We peel them while they are still hot (being careful!) and rice them into a big bowl. We add the heated milk, stirring with a spatula, and then the butter. We stir and add salt and pepper to taste until the butter is melted and the potatoes taste delicious!
