Sherry Vinaigrette

This dressing is delicious on any green salad, especially a salad topped with one or all of the following: toasted nuts, apples or pears, and blue cheese. This recipe can easily be multiplied for a quick and easy salad dressing anytime. The dressing will keep in the refrigerator for about a week. Originally served as part of Broccoli Pie.
Ingredients
- 1 tablespoon shallots (minced)
- 1/2 teaspoon Dijon mustard
- 1 tablespoon sherry wine vinegar
- to taste salt & pepper
- 3 tablespoons extra-virgin olive oil
Instructions
In a small plastic container with a lid, we put the shallots, mustard, sherry wine vinegar and a small pinch of salt and freshly ground pepper. We stir this with a fork and let it sit for about 10 minutes. We then add the oil and shake to combine. We taste for salt and pepper on a piece of lettuce and adjust.
