This is a garlic-y, olive-oil based sauce with a little hint of lemon juice. It is sometimes referred to as "mojito" and it is served as a dipping sauce. It is wonderful with tostones and yuca. Originally served as part of Nick's Really Big Latin Style Meal.

Ingredients

  • ½ cup extra-virgin spanish olive oil
  • 4 cloves garlic
  • 1 teaspoon lemon juice (freshly squeezed)

Instructions

We start by pouring the olive oil into a 2-cup measuring cup. We smash the garlic on our cutting board with the back side of our knife and remove the peel. Then we mince the garlic and add it to the oil. We pour in the lemon juice and, using our immersion blender, we blend until smooth. We refrigerate until needed (at most a few days).
