This sharp, sunny tasting dressing is inspired by an America's Test Kitchen episode, which featured a similar dressing on a Greek Salad. It would be wonderful with feta cheese and olives, but it is just as nice on a simple green salad. Originally served as part of Fresh Herbs.

Ingredients

  • 1 tablespoon red wine vinegar
  • ½ teaspoon freshly squeezed lemon juice
  • salt and pepper
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon fresh, leaves oregano (cleaned)

Instructions

We combine the vinegar, lemon juice and a small pinch of salt in a bowl and stir with a fork. We add freshly ground black pepper, the olive oil and the freshly picked oregano leaves. Stirring well, we then taste for seasoning on a piece of lettuce.

We stir again, trying to combine well, then divide it among four prep bowls to serve. Leftover dressing is covered and refrigerated.
