Potatoes with Truffle Oil
Our microwave is not just for reheating leftovers. It is a "helper" in the kitchen, both saving time and cooking food without dirtying extra pots. Potatoes are especially easy to prepare in the microwave and can become a quick side dish in minutes. Our smashed potatoes are finished (for the adults) with a drizzle of white truffle oil for a "sophisticated" mashed potato. The children help with the ricer for their potato, making potato "worms". Originally served as part of Ghost in the Kitchen.
Ingredients
- 1½ pounds 2 large Yukon Gold potatoes
- salt & pepper
- white truffle oil
Instructions
We scrub the potatoes and prick with a fork. We wrap each in a microwave-safe paper towel and place on a plate. We cook with our "potato" setting on our microwave, which takes about 5 minutes or so. We also remove our white truffle oil from the fridge.
When done, we gently roll each potato around on the plate to ensure that the potatoes are cooked evenly. One potato is peeled and riced for the children. They help to add salt and pepper. The other is smashed with a fork and drizzled with truffle oil. The potatoes are seasoned and served.
