Quesadillas
This very simple course is quite tasty as goes well with just about any mexican menu that you can come up with.
Ingredients
- 3 flour, organic red chile tortillas
- 4 ounces chopped mushrooms
- 1/4 cup queso blanco, shredded cheese
- 1 teaspoon chopped cilantro
- sprinkle cumin
- vegetable oil
Instructions
In a frying pan, we saute the mushrooms in a little vegetable oil with a sprinkle of cumin until tender. We then remove them from the pan and park them in a bowl.
We wipe out the pan and heat it to cook the quesadillas. We place a third of the ingredients on one half of a tortilla - mushrooms, cheese, cilantro - and fold over. We place in the heated pan with a tablespoon of vegetable oil and cook for a few minutes until browned on one side. Then we flip and continue cooking until cheese is melted and both sides are crispy. We were able to fit two quesadillas in the pan at a time, keeping them warm in a 250 degree oven while we finished the third quesadilla.
