Honey Apple Glazed Carrots
This is a simple, tasty side dish. Using the already peeled and bagged baby carrots means there isn’t much preparation. The kids may even enjoy this nutritious vegetable.

In a saute pan, we add the carrots, butter, apple juice, honey and some salt. We bring this mixture to a boil over medium heat, cover, and simmer gently for about 10 minutes. We then uncover the pan and and boil over medium heat. We shake the pan occasionally to turn the carrots and we cook for another 15 minutes or so. We want the carrots to be tender and the mixture to be reduced and nicely glazing the carrots. We taste for salt and add some pepper.
