Sausage Vegetable Grits
This is a quick meal that we made mostly with already cooked ingredients. We use our fridge/freezer and our pantry to create a delicious dinner out of what we have in the house. Originally served as part of Sausage Vegetable Grits.
Ingredients
- 1 cup , frozen leftover chicken sausage
- 3 cups leftover roasted asparagus, mushrooms, zucchini, red pepper, and garlic vegetables
- 2 tablespoons tomatoes (chopped)
- cheesy grits
- for garnish chopped parsley and grated cheese
Instructions
We start by making the cheesy grits and defrosting, in the microwave, the chicken sausage. We heat a large pan over medium heat with our already roasted vegetables. We add the chicken sausage and heat through. We keep on low, partially covered, until the grits are done.
We serve the sausage vegetable mixture over the cheesy grits topped with parsley and grated cheddar cheese.
