Pesto Chicken Sandwich
One of the best things about chicken dishes is that they're even better
leftover - especially when served cold. We re-use the
grilled chicken
from last night's
meal
as the primary ingredient in a sandwich tonight. Some toasted italian
bread, fresh tomatoes, and
pesto
make these simple sandwiches special.

Ingredients
- 4 slices bread
- 2 pieces chicken
- 2 tablespoons [object Object]
- 1 medium tomato (sliced and lightly salted on paper towels)
- salt & pepper
Instructions
We begin by lightly toasting our bread. Next we spread all 4 of the slices with half the pesto and place each chicken piece on a slice of toast. We top each chicken piece with the rest of the pesto, tomato slices, salt, pepper, and bread. We slice the sandwiches in half and enjoy!
