Again with the Brick

Ingredients
- 3 medium chicken breasts (divided)
- 1 large lemon
- .5 teaspoon mustard
- salt & pepper
- 1 tablespoon olive oil
- 1 sprig sage
- .5 loaf wheat bread
- 2 ounces cheese (grated)
- 3 slices ham
- mayonnaise
Instructions
We start by trimming our chicken of fat and putting them in a large resealable plastic bag. We wash our hands well.
Next, we zest the lemon over a piece of wax paper using our microplane. We have 1 teaspoon of zest. We squeeze the lemon halves into a measuring cup, discarding the seeds. We have 2 tablespoons of lemon juice. We combine the lemon juice, zest, mustard, some salt and pepper, and the olive oil in the measuring cup. Using scissors, we slice the sage leaves into the marinade.
We pour the mixture over the chicken breasts, seal the bag, and smoosh around the marinade. We set it aside in a bowl for 20 minutes.
We pre-heat our gas grill.
While the chicken is marinating, we cover our <a year="2001" month="09" day="02">grilling brick</a> with heavy duty aluminum foil.
We cut our bread in half lengthwise, and then slice almost all the way open. We have our cheese grated and the sliced ham ready.
Discarding the marinade, we grill the chicken on the hot grill for about 5 minutes per side. The chicken should be just cooked through.
We remove the chicken to a clean platter and let rest for a few minutes. Not all of the chicken will be used in the sandwiches—the rest will be used for other sandwiches and salads for a couple of lunches!
We slice two of the chicken breasts and layer it in the bread with the provolone and ham.
We put the sandwiches on the grill, one at a time, weighting them down with the brick facing the open sides of the sandwich so as to try and keep the ingredients inside. We cook for a few minutes on the one side, carefully remove the brick, flip the sandwich, and weight again. We keep them on the grill until the crust is toasty and the cheese is melted. We repeat with the remaining sandwich.
Each sandwich is sliced in half. We serve one or two per person, with mayonnaise if desired.
- Salad with Yellow Tomatoes
Robin and the kids went to visit Chris for lunch. The kids have been keen on making their own pizzas at Pizzeria Uno ever since our last visit to that establishment. Our daughter had read that she could do so on the menu. Once that girl gets something in her head there is very little chance that she will forget. Since school is starting next week, meaning that this is likely the last time she will be able to visit Chris at work for some time, we are happy to oblige.
Both she and her little brother very much enjoyed the experience.
Both kids forewent snacks this afternoon so that they could have extra s'mores. Our son did break down and have one Oreo in the afternoon, so he had two and a half s'mores to his sister's three. Even the baby had some.
The baby still prefers raspberries, though. She has clearly been around her big sister too much. She now puts the raspberries on the tips of her fingers to eat them. The other day, she had several raspberries on both fingers when some music came on the TV. She started waving her raspberry tipped fingers in the air, grooving to the music. As testament to her perfection of the art of raspberry on the fingers, not one fell off during the dance.
One last reason for this particular meal was that we knew Sarah, a notorious s'mores hound, was coming over for knitting lessons. We left the grill open so that she could have some.
