Nanny's Sauce

As the base for many Italian meals a good tomato sauce is very important. The preparation of this sauce is quite easy - requiring only a single large pot (actually we use out dutch oven since it's heavy and big). Despite the easy preparation, the sauce is excellent. Originally served as part of Pasta with Sauce.

Ingredients

  • 32 ounces canned Tomato Sauce
  • 6 ounces canned Tomato Paste
  • 2 cloves garlic (peeled)
  • 1 teaspoon olive oil
  • sprinkle hot pepper flakes
  • 1 1/2 cups water
  • 1 bay leaf
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1 teaspoon basil flakes
  • 1/2 teaspoon parsley flakes
  • to taste salt & pepper

Instructions

We put our dutch oven on the stove, but do not turn on the heat. We put the olive oil and the garlic cloves and turn on medium heat. We saute the garlic until fragrant.

We add the remaining ingredients and, over medium heat, bring to a simmer. We reduce the heat and continue to simmer, partially covered. While the sauce is simmering, we adjust the spices to taste.

Before serving, we remove the garlic cloves.
