Balsamic Vinaigrette

This dressing is delicious on any green salad or even on roasted vegetables. This recipe can easily be multiplied for a quick and easy salad dressing anytime. The dressing will keep in the refrigerator for about a week. Originally served as part of Pizza.

Balsamic Vinaigrette

Ingredients

  • 1 tablespoon shallots (minced)
  • 1/2 teaspoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • to taste salt & pepper
  • 2 tablespoons extra-virgin olive oil

Instructions

In a small plastic container with a lid, we put the shallots, mustard, balsamic vinegar and a small pinch of salt and freshly ground pepper. We stir this with a fork and let it sit for about 10 minutes. We then add the oil and shake to combine. We taste for salt and pepper on a piece of lettuce and adjust.
