Guacamole

If there's one thing we like more than mexican food, it's mexican with guacamole on the side. This recipe makes fresh guacamole, which is simply the only way to have it. Instead of pureed, we leave the avocados in small chunks, which brings out the flavor of the avocados very nicely. Originally served as part of Chicken Burritos with Fresh Guacamole.

Ingredients

  • 1 tablespoon jalapeno pepper (seeded and minced)
  • 1 teaspoon kosher salt
  • 1 tablespoon cilantro (chopped)
  • 3 tablespoons tomato (chopped)
  • 2 tablespoons onion (minced)
  • 1 medium ripe avocado
  • 1/2 lime

Instructions

On our cutting board we start with the minced jalapeno pepper, salt, and cilantro. We chop these together with our knife, mashing them into a paste. We transfer this mixture to a medium size serving bowl.

We mix our chopped tomato (discarding any juice) into the bowl. Next we stir in the onion. When we are almost ready to eat, we open the avocado and remove the pit. We make vertical and horizontal cuts in each half of the avocado and scoop out the cubes with a spoon. We gently toss the avocado into the bowl and squeeze on some lime.
