Egg Salad Sandwich

When Robin asked for Nanny's recipe for egg salad she was given the ingredients, without any measurements. The only instruction was to sprinkle paprika on top for color, never to mix in! Originally served as part of Egg Salad Sunday.

Ingredients

  • 4 large eggs (hard boiled , peeled)
  • 1 tablespoon light, more if desired mayonnaise
  • ¼ cup celery (finely diced)
  • salt & pepper
  • ½ large wheat baguette
  • sweet paprika

Instructions

We use our egg slicer to slice each egg, rotate the egg 90 degrees, and slice again. This large dice is placed in a large bowl. Using a fork, we continue to mash the eggs as we add the mayonnaise, celery, salt and pepper. We taste for seasoning.

The bread is cut into three sandwich pieces and sliced horizontally. We fill with the egg salad, add more mayo if desired, and sprinkle on the paprika.
