Egg Salad Sunday

Ingredients
- 4 large eggs (hard boiled <howto label="hard_boiled_eggs"/>, peeled)
- 1 tablespoon mayonnaise
- .25 cup celery (finely diced)
- salt & pepper
- .5 large baguette
- paprika
Instructions
We use our egg slicer to slice each egg, rotate the egg 90 degrees, and slice again. This large dice is placed in a large bowl. Using a fork, we continue to mash the eggs as we add the mayonnaise, celery, salt and pepper. We taste for seasoning.
The bread is cut into three sandwich pieces and sliced horizontally. We fill with the egg salad, add more mayo if desired, and sprinkle on the paprika.

We made a day trip to Brooklyn yesterday to visit Nanny and Gramps. We normally go up in the spring and fall, but make an exception because Aunt Tara, Uncle Todd, Brian and Kevin are using their vacation to visit. It was the perfect chance to catch up, if only for a little while, and to get some good eats at the same time. We visited the Chocolate Factory and Court Street Pastry—two must-visit shops. We had panelles for lunch (of course!). But the highlight of the trip, naturally, was spending time with family.
