Spicy Salad with Orange Champagne Vinegar
We purchased an Orange Muscat Champagne Vinegar at Trader Joe's and it is wonderful! We've made several salads with it (although only one has found its way into our cookbook). It is sweet from the oranges, which means that it does not need any oil to make a balanced salad dressing. We combine it tonight with spicy greens, sweet, ripe, heirloom tomatoes, crisp Kirby cucumbers, and creamy feta cheese. Originally served as part of Repeated Leftovers.
Ingredients
- 1½ cups mixed, spicy blend, from organic farmer lettuce
- ½ large beefsteak tomato (diced)
- 1 small Kirby cucumber (rinsed, partly peeled, sliced)
- 1 tablespoon Orange Muscat Champagne vinegar
- 2 tablespoons Feta cheese
- black pepper
Instructions
We cleaned the greens ahead of time with our salad spinner . We remove them from the fridge and portioned out two salads on dinner plates.
We top each salad with tomatoes and cucumbers and then drizzle on some vinegar. The cheese is sprinkled on and each salad gets the final addition of freshly ground black pepper. We taste and serve.
