Fig Salad with Honey Dressing
We received fresh figs from our very kind neighbors. We dress them with a honeyed version (and omitting the mustard) of our sherry vinaigrette for a simple, tasty salad. Originally served as part of Autumn Eggs.
Ingredients
- 1½ cups spicy mix lettuce (cleaned )
- 1 teaspoon sherry vinegar
- ¼ teaspoon clover honey
- salt & pepper
- 1 tablespoon extra-virgin olive oil
- 8 small fresh, purple figs
Instructions
We start by portioning our cleaned lettuce on two dinner plates. We mix the vinegar, honey, and some salt and pepper, in a large prep bowl with a fork and add the oil. We rinse and dry the figs, quarter, and arrange on the salad. The dressing is quickly mixed again with the fork and drizzled on the salads.
