- Spicy Turkey Burgers [View Recipe]

- 1.5 tablespoons oil (divided)
- 1 small onion
- .5 medium bell pepper (cleaned)
- 1 clove garlic

- .5 tablespoon chile powder
- 1 teaspoon cumin
- .5 teaspoon hot sauce
- 1 pound turkey
- 4 hamburger buns
- .5 avocado
- lime
- cilantro (cleaned)
- salsa
Instructions
We start by sautéeing the vegetables. We heat our 10-inch nonstick pan with ½ tablespoon of the oil over medium-low heat. We peel and mince the onion and add it to the pan. We stir with a wooden spoon and then mince the green pepper. The pepper is added to the softening onions. We peel the garlic clove and discard the peel. We sprinkle the clove with a little salt and add a little salt to the pan. We mince the garlic and stir it into the tender vegetables, which have now been cooking for 5-10 minutes. At this time, we also add the chipotle chile powder and cumin. We stir and, after a minute, add the Tabasco. We remove the vegetables to a clean plate, spread them out, and refrigerate for about 10 minutes to cool.
We rinse the nonstick pan, wipe it clean and set it aside (since we will cook the burgers in it).
We preheat the oven to <temp val="400"/>.
We also start heating our nonstick pan again with the rest of the oil.
We sprinkle salt and pepper into a large bowl. We get the cooled vegetables out of the fridge.
With disposable, clean gloves, we start working with the ground turkey.
We season around a quarter of the turkey with a little salt and pepper. We fashion this minimalist mixture into small patties for the kids and set aside.
We put the remaining turkey and the cooled vegetables into the bowl. We stir the mixture, but try not to work the meat too much—just enough to spread the seasoning around. We make 4 burgers with the 12 ounces of ground turkey and discard our gloves.
When the oil is hot, we thoroughly cook the childrens' burgers, then place them on a sheet pan in the oven.
We place the four spicy burgers into the pan. We wash our hands again and clean up while the burgers brown.
The burgers are cooked for 4 minutes—until nicely browned—then flipped. We cook for another 4 minutes and then place the oven-safe pan into the oven to ensure that the burgers are cooked through. We cook for an additional 6 minutes—until the burgers are firm to the touch.
While the burgers are in the oven finishing cooking, we lightly toast the buns. We scoop out the avocado flesh with a spoon, slice, and sprinkle with fresh lime juice and salt.
We serve the cooked burgers topped with the avocado, some cilantro and lots of salsa.

- 2 tablespoons mayonnaise
- 1 teaspoon vinegar

Instructions
We prepare the ingredients in the afternoon to allow the flavors to meld.
We begin by placing the broccoli slaw in a large bowl. We add the mayonnaise, rice vinegar, a pinch of salt (about ¼ teaspoon of coarse salt) and freshly ground black pepper. We toss with two forks to mix the dressing and sprinkle on some celery seeds. The bowl is covered with plastic wrap and refrigerated until it is time to eat.

The big excitement for Robin was a twist on everything. Instead of a regular bun, a whole wheat bun. Instead of a hamburger, a turkey burger. Instead of cole slaw, broccoli slaw. Instead of fries, chips. Instead of ketchup, salsa.
Yep, Robin has a very odd sense of the exciting, but she sure can cook.
