Italian Bread with Sun-Dried Tomatoes

This sun-dried tomato mixture tops fresh bread very nicely. We had it tonight as a side dish with some pasta with chard.

Ingredients

We bring a small pot of water to a boil. In a small bowl, we add the water to the tomatoes and let sit for 15 minutes. We then chop the tomatoes into smaller pieces.

We mince the garlic and add it to the olive oil in a small frying pan. We saute the garlic slightly. We julienne (cut into strips) two of the four basil leaves and add them to the oil along with the tomatoes. We cook for about 5 more minutes.

Serve in a ramekin, topped with torn basil leaves.
