Sausage Vegetable Grits
We enjoyed a very simple meal this evening - relying mostly on leftovers
and pantry items. It was a very nice way to end a relatively restful
weekend. On a completely unrelated note, Chris installed a faucet
all by himself (something no one thought possible).

- 1 cup chicken sausage
- 3 cups vegetables
- 2 tablespoons tomatoes (chopped)

- chopped parsley and grated cheese
Instructions
We start by making the <a href="/recipes/2002/01/24/cheesy_grits.html">cheesy grits</a> and defrosting, in the microwave, the chicken sausage. We heat a large pan over medium heat with our already roasted vegetables. We add the chicken sausage and heat through. We keep on low, partially covered, until the grits are done.
We serve the sausage vegetable mixture over the cheesy grits topped with parsley and grated cheddar cheese.
